Banana Bread

 
 

This recipe makes a 9” X 5” loaf pan

Preheat the oven to 350°F

NOTE: If you don't want the cacao powder, just switch the weight of it out into all-purpose flour.

4 ea Ripened Banana, mashed into puree

85 grams of melted butter

1/3 cup Plain Greek Yogurt (strained, thick and creamy, whole milk)

220 gram Brown sugar - white sugar works also great

2 ea Eggs

225 gram All purpose flour

30 gram Cacao powder

1 Tbls Vanilla extract

1 1/2 tsp Baking soda

1/2 tsp Salt

1/2 - 1 cup Semi sweet chocolate chips for baking

In a medium mixing bowl, add all ingredients except the chocolate chips. Stir all the ingredients with a spoon or spatula until smooth, then fold in the chocolate chips.

Grease a 9”x5” loaf pan or similar, pour the batter into it, and bake for 45 minutes to 1 hour. Poke the cake with a cake tester or wooden skewer to ensure it is dry and baked through.

Once baked, allow to set in the loaf pan, then carefully pour it out onto a grate to cool all the way, if you have the patience and can resist!
